Fall Harvest Salad
So fall is here and I couldn’t be happier about it! I always feel a new surge of energy as the humid heat of Charleston summer is lifted. With that I’ve been pretty excited to create some new stuff - here’s another meal that’s been on repeat 💫
Ingredients
5 cups chopped kale
1 cup cooked quinoa
1 diced red apple
1/2 cup chopped walnuts
1/2 block vegan feta cheese (my favorite is made by Violife)
1 tbs olive oil
Miso Tahini Dressing to taste
Method
Cook the quinoa ahead of time so that it has a little bit of time to cool off
Massage the kale with 1 tbs olive oil in a large bowl
Toss in in the quinoa, apple, walnuts, and vegan feta
Top with dressing to taste & enjoy!
