Fall Harvest Salad

So fall is here and I couldn’t be happier about it! I always feel a new surge of energy as the humid heat of Charleston summer is lifted. With that I’ve been pretty excited to create some new stuff - here’s another meal that’s been on repeat 💫


Ingredients

  • 5 cups chopped kale

  • 1 cup cooked quinoa

  • 1 diced red apple

  • 1/2 cup chopped walnuts

  • 1/2 block vegan feta cheese (my favorite is made by Violife)

  • 1 tbs olive oil

  • Miso Tahini Dressing to taste

Method

  1. Cook the quinoa ahead of time so that it has a little bit of time to cool off

  2. Massage the kale with 1 tbs olive oil in a large bowl

  3. Toss in in the quinoa, apple, walnuts, and vegan feta

  4. Top with dressing to taste & enjoy!
