Quick Pickled Onions

Quick Pickled Onions! I’ve always had such a hard time finding these in the stores but now I know there’s really no reason to. These are so easy to throw together and are a great addition to most dishes. They are so versatile and add that perfect pop of color 🤩


Ingredients

  • 1 medium thinly sliced red onion

  • 1 clove garlic (optional)

  • 1 thinly sliced jalapeño (optional)

  • 1/4 cup white vinegar

  • 1/4 cup apple cider vinegar

  • 1/4 cup water

  • Pinch of salt

  • Pinch of sugar

Method

  1. Add your vinegars, water, salt, and sugar to a small pot and bring to a boil

  2. Pack the onions, garlic, and jalapeño (if using) into a 16 oz mason jar

  3. Carefully pour the boiling liquid over the onions and fill to the brim

  4. Put the lid on the jar and let cool at room temperate for an hour

  5. Store in the fridge for up to two weeks
