Spicy Creamy Tahini Noodles

Spicy Creamy Tahini Noodles šŸ¤¤these guys are amazing. Warm and comforting with a little spice to keep things interesting. And know: the sauce is key.


Ingredients

  • 8 oz pasta (I used Lotus Foods brown rice pad thai noodles)

  • 2 cloves grated garlic

  • 1 in knob grated ginger

  • 2 tbs tahini

  • 1 tbs miso

  • 1/2 can coconut milk (or ~7 oz)

  • 1 tsp - 1/2 tbs spicy chili oil

  • 1/2 tsp garlic powder

  • 1/4 tsp white pepper

  • 4 oz sliced mushrooms

  • 1/4 cup thinly sliced green onions (for serving)

  • Black and/or white sesame seeds (for serving)

Method

  1. Cook your noodles per the directions on the package.

  2. While the pasta is cooking, sauteĢ the garlic and ginger in coconut oil.

  3. Once the garlic has started to brown slightly, add in the tahini, miso, coconut milk, chili oil, garlic powder, and white pepper.

  4. In a separate pan, brown your mushrooms over medium-high heat.

  5. Simmer your sauce on low and mix until well combined.

  6. Once your noodles are done, add them to the pan with the sauce and make sure to add in a little of that pasta water!

  7. Plate with the crispy mushrooms, green onions, or any other veggies you want and enjoy!
