Kani Salad
I was loooong overdue in trying this salad. Not only is she beautiful, she is SO delish. Easy to prepare - just takes a little prep work and guaranteed to be a hit!
Ingredients
1 medium cucumber
1 medium carrot
1 small mango
1 avocado
4-5 sticks of imitation crab
1 tbs masago
2-3 tbs Kewpie mayo (to taste)
1 tbs sriracha (to taste)
1 tbs soy sauce
1 tsp sesame oil
Furikake
Panko
Method
Finely julienne the cucumber, carrot, and mango (I grated my carrot as a shortcut)
Shred the crab - if it’s not shredding easily, microwave it for ~10 seconds
In a medium bowl toss the cucumber, carrot, mango, and crab with the masago, mayo, sriracha, soy sauce, and sesame oil
Top with a large pinch of panko, generous sprinkle of furikake, and avocado
Best if served cold - enjoy!
