Kani Salad

I was loooong overdue in trying this salad. Not only is she beautiful, she is SO delish. Easy to prepare - just takes a little prep work and guaranteed to be a hit!


Ingredients

  • 1 medium cucumber

  • 1 medium carrot

  • 1 small mango

  • 1 avocado

  • 4-5 sticks of imitation crab

  • 1 tbs masago

  • 2-3 tbs Kewpie mayo (to taste)

  • 1 tbs sriracha (to taste)

  • 1 tbs soy sauce

  • 1 tsp sesame oil

  • Furikake

  • Panko

Method

  1. Finely julienne the cucumber, carrot, and mango (I grated my carrot as a shortcut)

  2. Shred the crab - if it’s not shredding easily, microwave it for ~10 seconds

  3. In a medium bowl toss the cucumber, carrot, mango, and crab with the masago, mayo, sriracha, soy sauce, and sesame oil

  4. Top with a large pinch of panko, generous sprinkle of furikake, and avocado

  5. Best if served cold - enjoy!
