Cilantro Lime Sour Cream

This is the perfect topping to chili, enchiladas, tacos, basically everything! It’s light and fluffy yet packed with flavor - not to mention, it’s super simple to make.


Ingredients

  • 1 cup soaked cashews

  • Half of a ripe avocado

  • Big handful of cilantro

  • 2 cloves of garlic

  • Juice of 1-2 limes

  • 1 tsp apple cider vinegar

  • Large pinch of salt

  • Water as needed

Method

  1. Boil enough water to cover the cashews and let them soak for about an hour

  2. Once your cashews are done soaking, add all ingredients (except for the water) to a high speed blender

  3. Begin to blend and slowly add in a bit of water until combined

  4. Taste and adjust seasonings

  5. Once you are happy with the flavor, you can add in a bit more water and blend until a smooth & creamy consistency forms - the key is to get in your desired amount of lime juice and apple cider vinegar before you begin adding more water so that the texture doesn’t become too thin!

  6. I love to transfer mine into a squeeze bottle or a plastic baggy with one tip cut off so you can make your meals pretty :)
